Microgreens: a full crop in ten days on a windowsill
No garden, no sun, no patience required - the fastest useful thing you can grow indoors.

Microgreens are ordinary vegetables harvested at the first-true-leaf stage. You need a tray, an inch of medium, seed, and a windowsill.
The method
Fill a shallow tray with moist cocopeat and level it. Scatter seed densely - far denser than you would ever sow in a bed. Mist, cover with a second tray for two to three days to hold humidity, then uncover and give it light.
Watering
Mist from above until the seed has rooted, then water into the tray base. Wet leaves in still air are how a tray turns slimy overnight.
Harvest
Cut with scissors just above the medium when the first true leaves appear, usually day 8 to 12. Cut what you will eat that day; they do not store well.
Where to start
Mustard and radish are near-foolproof and fast. Sunflower and pea shoots give the most volume. Wheatgrass is for juicing, not salads.
